This is the first time I’ve made food that is so delicious it’s made me drool while I’m eating it.
Sweet and spicy broccoli, red bell pepper, red onion and seitan over brown rice with a side of garlic and rosemary baked golden potatoes.

Here’s the potato recipe but I used baby golden potatoes instead of red ones: http://www.cookingforengineers.com/recipe/34/Garlic-Roasted-Potatoes - I also added some parsley, Mrs. Dash’s Garlic & Herb blend and used California garlic salt instead of regular.
You’ll want to start that first because it takes about 30+ minutes to bake and you’ll want to let it cool a little as well. Also if you’re wanting rice, be sure to plan that out so that it’s done in an close enough window that it’s not done too early or too late.
While that’s going, add these ingredients to a wok over low to medium heat, and stirring every few minutes or so to make sure nothings sticking to your wok:
1 tablespoon sesame oil
1 diced red bell pepper
2 Softball-sized broccoli heads, cutting off the tops
1/4th of a diced red onion
1 8 ounce package of seitan strips
For the sauce add the following liquids to a skillet over medium-high heat then add the rest and stir frequently until it begins to thicken:
1/2 cup light soy sauce
1/4 cup rice wine vinegar
1 1/2 tablespoons cornstarch
1/2 cup brown sugar
1 tablespoon Sambal Oelek (or Sriracha) (or both!)
1 teaspoon red pepper flakes (or more to taste)
1 teaspoon crushed cayenne (or more to taste)
1 teaspoon crushed ginger
Once the sauce starts to thicken, add it to your veggies and stir so that it covers everything. Serve over rice with the potatoes on the side and let your taste-buds enjoy this treat.

This looks heavenly :O
